Heritage

Matusmura–
A Name Carved into
Tsukiji’s History

It all began in Nihonbashi Muromachi,
in the romantic era of Taisho Japan.
After honing his craft in Tosa, our
founder Ryotaro Matsumura opened a
humble shop that would become the
origin of Katsuobushi Matsumura.
Following the Great Kanto Earthquake,
we raised our noren
in the outer market
of Tsukiji—and have remained there for
over a century.
Since day one, our focus has never
changed:
Shaved fresh. Pure ingredients.
Exceptional dashi.
Each day, we deliver the finest bonito
flakes—
shaved at their peak, never the
day before.
